| | Liz's Potato Soup
Ingredients:
 | 4-6 strips of bacon |
 | 1 good size onion |
 | 2-3 stalks of celery |
 | 1/2 cup chopped carrots |
 | 6-8 good sized potatoes cleaned, peeled and chopped |
 | 2 cans chicken broth |
Season to taste with salt, pepper, thyme or dill.
Healthier version:
 | Omit bacon and sauté vegetables in canola oil |
 | Use vegetable broth or water in place of chicken broth |
Directions:
- Brown bacon in your soup pot and remove from pan and set aside
- In the same pot sauté until soft, but not brown, the onions carrots and
celery
- Add potatoes
- Add chicken broth and water to cover
- Cook until the potatoes are tender, hand mash about half of the potatoes
(in the pot)
- If desired thicken with: cream, cheddar cheese, or roux.
- Garnish with crumbled bacon, cheddar cheese, fresh ground black pepper
Makes: 8 bowls soup
Prep: 15 minutes
Cook: 20 minutes
